Rainbow carrots are a feast for the eye. They come in a variety of purple, yellow and orange, and are rich in antioxidants. They taste subtly sweet.
The carrot is one of the UK’s most popular vegetables, and ours are sourced locally. They can be cooked or eaten raw.
An 80g serving counts as 1 portion of your 5 a day fruit and vegetables. Aim to eat 5-9 portions of fruit and vegetables a day.

Place chopped carrots on a baking tray lined with baking paper. Drizzle 1 tbsp of oil on top of the carrots and add herbs or spices according to your preferences. Add salt, pepper, and paprika or cayenne pepper, or mix with some chopped parsley.
Bake in the oven for 25 mins or until golden.
Serve as a side or tasty snack!
